I need souffle help? This is urgent?

Okay well I am making Spiced Pumpkin Souffles with a Bourbon Molasses sauce for a Thanksgiving theme at the restaurant I work at, the recipe says that it must be served right away, well I highly doubt people will purchase it right away, I don’t even think they will purchase it all in one night, so how can I keep the Souffles the way they are, when they are meant to be warm, and I want to keep it inflated.

You can’t souffles collapse after they are exposed to the air since it’s cooler than the oven. The only thing I can suggest is make the souffles is individual ramekins to order.

question of flour buns?

Recipe calls for pastry flour, whole wheat … I do .. Wheat pastry flour is made from soft wheats with a lower gluten content and is ideal for muffins and desserts, cakes and cookies. What I can use instead … I spelled, wheat, kamut and rice flour .. Maybe a combo?

Personally for best flavor that combines all that way you can not go wrong. Add the butter too much or decay, is fragile. Is quite thick and soft so it will rise up and nice and smooth .**
