The festive season for many includes a lot of baking and eating baked goods. This usually means ingesting a lot of high calorie foods. If you want to forego the calories but still enjoy the yummy stuff there are a number of things you can use as substitutes in your baking recipes  for this Christmas and beyond.

  1. For those cookie recipes that call for chocolate chips you can substitute these with dried fruits. You can use prunes, cranberries, cherries, figs or any other dried fruit that will complement the taste of your cake. These will still add some sweet to your cookie but less calories than chocolate chips would.
  2. Replace white flour with wheat flour. You may need to only substitute a portion of the flour depending on the recipe as wheat flour may not bind well. Wheat flour gives more fiber and helps with digestive  regulation. You can also add some oats especially when baking cookies.
  3. Replace oil and butter with applesauce.
  4. Use only egg whites instead of whole eggs or use an egg  substitute.
  5. Instead of using white sugar use a natural sweetener such as stevia or sucanat.


Those are just five ways to still enjoy the festivities of the holiday without packing on the pounds. That alone may not prevent you from putting on any weight but there are other measures that you can use in conjunction with healthier baking.

How do you make whipped cream for a cake?

I use an electrical mixer to turn the liquid into whipped cream, but it’s far too soft for designing. I have tasted whipped cream from other bakeries and for some reason their cream tends to be more solid than the one I use at home. Do you guys have an idea or have some sort of recipe for a whipped cream like that?

First of all do not compare home made whipped cream to the stuff they call whipped cream.
If you want to use whipped cream you need to stabilize it.
You can get a stabilizer at the market. Look in the aisle that has baking supplies. The brand I am familiar with is Oketer and it will come in a little packet. It will say it is a stabilizer.
Your other option is to use an unflavored gelatin, dissolve it as directed in cold water then add it to the whipped cream during the whipping process. This will stabilize the whipped cream and add no flavor.
Another way to make the whipped cream last longer is to whip it then place it in a lined strainer and set it in the refrigerator for several hours. The excess liquid will seep out leaving the rest of the whipped cream more dense.

With all this the whipped cream will not hold up long or hold intricate designs. A non dairy whipped topping is what bakeries use. It is more stable and is not as temperature sensitive as the real whipped cream.

For your designs I would stick to butter cream frosting. It lasts longer and is more stable than the whipped cream topping. If you want to try something different make a French or Italian butter cream frosting. Much better than what we call butter cream, it tastes better but is a challenge to make.
Save the whipped cream for strawberry shortcake, ice cream sundaes, pies and other desserts.
