There are lots of different sofrito recipes and sofrito rice recipes. Of course, not everyone eats sofrito with rice. It can be used in lots of different ways. While most sofrito recipes contain peppers and onions, the rest of the ingredients largely depend on where the sofrito is prepared and by the individual cook who’s making the sofrito. For example, most people use tomatoes in their sofrito, but in some cuisines, tomatoes aren’t used at all. The same goes for garlic. And some cooks like adding celery to their sofrito recipe, while others don’t. Even the types of peppers used aren’t agreed upon. Some people prefer bell peppers, while others might prefer Cubanelle peppers or some other type of pepper. Personally, I like to include bell peppers and some hot peppers in my sofrito because I like it to have some heat.
In addition to a varied array of vegetables, different herbs and spices are used in sofrito recipes, too. some of the most popular are cumin, oregano, bay leaf, cilantro, fresh parsley, and paprika. Some of the best sofrito I’ve ever eaten, however, contained curry powder.
I think when you make sofrito, you should include your favorite flavors. There’s no law that requires you to follow a sofrito recipe exactly!
