There are lots of different sofrito recipes and sofrito rice recipes. Of course, not everyone eats sofrito with rice. It can be used in lots of different ways. While most sofrito recipes contain peppers and onions, the rest of the ingredients largely depend on where the sofrito is prepared and by the individual cook who’s making the sofrito. For example, most people use tomatoes in their sofrito, but in some cuisines, tomatoes aren’t used at all. The same goes for garlic. And some cooks like adding celery to their sofrito recipe, while others don’t. Even the types of peppers used aren’t agreed upon. Some people prefer bell peppers, while others might prefer Cubanelle peppers or some other type of pepper. Personally, I like to include bell peppers and some hot peppers in my sofrito because I like it to have some heat.

In addition to a varied array of vegetables, different herbs and spices are used in sofrito recipes, too. some of the most popular are cumin, oregano, bay leaf, cilantro, fresh parsley, and paprika. Some of the best sofrito I’ve ever eaten, however, contained curry powder.

I think when you make sofrito, you should include your favorite flavors. There’s no law that requires you to follow a sofrito recipe exactly!

If I had to sit down and think real hard about what my favorite treats might be that I buy in bakeries, it might seem at first like a pretty easy thing to do. So one day, I sat down to ponder this happy thought and it became clear to me that there was not going to be a simple answer to this. After going through a collection of great tasting confection and pastries items in my head, I realized there and then that I actually loved to eat far more than was good for me!

In fact, the though of all that sweet tasting food made me stop what I was doing and head off to the local bakery so I could buy a few things and eat them! One thing is for sure and that is just thinking about those indulgences created such a craving for them that my stomach cried out for what my brain was teasing it with! I don’t suppose I could get much further from thinking about its polar opposite in raw food and weight loss if I tried!

So let this be a lesson to anyone thinking about trying this at home. If you are going to start thinking about food that is going to make you gain weight, then you had better make sure you have some of it to hand so that you can fulfil your desires before they eat away at you and cause you to go crazy and buy every pastry treat and piece of confection in the store!

If you asked me what’s my favourite thing about baking – and you’d be here for a while while I though about it – I’d probably eventually say (after much umming and ahhing) it’s the texture of things. 

Let me explain.  Baking is all about the aromas and flavours of the breads, pastries and cakes we bake, but the true joy is in the feel of it all.  Kneading your hands into a heavy lump of dough, working through it until it’s the perfect consistency.  It’s a great feeling, knowing that with each kneading motion you’re making better bread.  Just lovely. 

And then there’s the even better feeling of sliding a freshly baked loaf from the oven.  Feeling the heat of the baking tray through a few layers of flour sack towels.  Wrapping the bread in a thin towel to ease it out of the tray, and laying it down on the table to cool as the kitchen fills with that fresh baked aroma.  There’s just nothing better on the planet for an enthusiastic baker.

Of course, none of this comes close to the joy of actually eating our creations.  I just baked a few baguettes, and there’s just nothing on earth like tearing of one end and snacking on the soft, fluffy bread within.
